Making the Most of Pancake Day

Whether you serve pancakes regularly or use this simple dish as a holiday special, there is a pancake for everyone. With hundreds of interesting, delicious and surprising combinations of toppings, such as corn & chive and spinach & blue cheese, pancakes are a wondrous food of endless experimentation.

Try this pancake recipe for coffee hotcakes with poached pear, putting a modern twist on the traditional pikelet.

For the pancakes you will need:                          For the poached pears you will need:
·         200g self raising flour
·         100g caster sugar
·         ½ teaspoon bicarbonate of sofa
·         1 cinnamon stick
·         1 teaspoon baking powder
·         2-3 pears
·         1 egg, separated
·         ½ lemon
·         200ml milk

·         2 tablespoons coffee

·         20g unsalted butter

·         200g Greek yoghurt

·         Icing sugar for dusting


Step 1
Place 750ml of water in a pan with the sugar and cinnamon.

Step 2
Stir over low heat until sugar has dissolved, then simmer on medium-low heat for 5 minutes. Peel the pears and rub them with the cut lemon. Please the pears in the syrup and simmer for 15 minutes or until cooked through. Allow them to cool in the liquid.

Step 3
Sift the flour, soda and baking powder into a bowl and stir in the sugar. Beat together the egg yolk, yoghurt, milk and melted butter in a separate bowl.

Step 4
Beat in the dry ingredients and coffee essence. Place the egg white in a separate bowl and whisk until soft peaks form. Fold into the batter.

Step 5
Lightly brush a non-stick frying pan with melted butter and place over medium-high heat. Pour the pancake mixture into the pan and cook for 1-2 minutes, until golden brown, flip and cook for a further minute to ensure both sides are golden.

Step 6
Serve 2-3 hotcakes with some sliced pear and thick Greek yoghurt and dust with some icing sugar for the perfect pancake dish!

This recipe serves 4 people, eating 2-3 pikelets each. If you are catering for more, increase the ingredients proportionally to make the perfect pancake dish for hungry crowds!
