As the Australia Day lamb campaign kicks off, it’s time to celebrate everything that makes us proud to be Australian. And one of those is eating lamb. We’ve got an impressive and tasty recipe to get your Australia Day 2016 celebrations in full flow at your next BBQ. Let’s face it, there’s no better way to celebrate your Australia Day than cooking some good grub for everyone to tuck into.
Take a look at our easy to follow recipe below. It’s a barbecue classic with a little kick that’s full of flavour and will leave your guests wanting more.
Lamb Skewers in a Coconut Spiced Sauce

800ml coconut cream | |
4 tsp soy sauce | |
4 tbs chopped coriander leaves | |

2 zucchini | |
1 red capsicum | |

2 garlic cloves crushed | |

800g lamb fillet cubed | |
1 cup button mushrooms | |
1 cup snow peas stems |
For the Coconut Spiced Sauce
1. Grab a saucepan large enough to hold all the coconut cream. Anything bigger than one litre will do.
2. Add the chicken stock, chilli, cloves, spices and lemon juice. Slowly cook until they combine, taking care to stir every now and then.
3. Add the coconut cream and soy sauce and bring to the boil. Keep stirring until you’re happy the flavours have fused.
4. Simmer without a lid for around 10 minutes then stir in the coriander leaves. You’ll notice a floral fragrance rising from the saucepan. Leave the sauce to one side while you take care of the skewers.

For the Lamb Skewers (makes approx 50)
1. You may have to cook the skewers in batches. So grab a pan large enough to hold as many skewers as you’d like.
3. Use your Japanese Mandoline to slice the carrots, zucchini and capsicum lengthways into consistent segments. Add them to the garlic and onion mix and give it a good stir.
4. Divide and thread all of the ingredients onto the skewers. Take care not to pack the skewers too tightly so the ingredients cook thoroughly.
5. Barbecue your skewers on a medium/low heat, turning every now and then so they’re golden brown all over.
6. Add the skewers to the pan and cover them with the spicy coconut sauce. Slowly simmer on the hob for 5 minutes, turning the skewers half way through to ensure the sauce covers the tender lamb.
